How to cut a sponge cake

Cutting a sponge cake to get the maximum amount of portions can be tricky but if you use this 'grid pattern' then you'll always get neat and even portions for all your guests! Start by using a sharp, thin knife and wipe between cuts. With the trend being towards deeper cakes, we've portioned the cake in our video into 1" x 1" slices but most sponge guides (like the one below) allow for 2" x 1" as a guide:
